Ingredients for 4 people:
800 g potatoes, waxy
¼ teaspoon vegetable stock powder
100 ml water, hot
4 egg (s), size M
1 glass of gherkins, approx. 330 ml
5 stalks of parsley
For the dressing:
150 g salad mayonnaise
salt and pepper
sugar
2 tbsp fruit vinegar
preparation:
Boil, peel and cut the potatoes into cubes. Mix the water and the stock powder. Pour it over the diced potatoes and let them cool.
Hard boil the eggs.
Drain the gherkins and collect the cucumber liquid. Cut the cucumber into small pieces. Wash the parsley, pluck the leaves and chop. Rinse the eggs and chop them up too.
Mix the mayonnaise with about 6 tablespoons of cucumber liquid until smooth. Season everything with salt, pepper, sugar and vinegar.
Mix the potatoes, gherkins and parsley with the dressing. Fold in the eggs.
Let the potato salad stand for 1 hour.
This goes well with sausages, fish fingers or fried fish!
