This is a wonderful and simple recipe and all my family from my kids to grandbabys love when I make it for them. I love simple in the kitchen. Here we go:
Ingredients
1 Roasting Chicken (whatever size will work. I have even used Cornish hens).
1 box or bottle of Kosher Salt (This is large granulated salt, can be found at most grocery stores).
1 large bakers tray or even a uncovered square pyrex.
Spices you like on your chicken (This can vary…I like many different spices. (Garlic powder, Cilantro, parsley, pepper. For this recipe do not add salt.
You wash your chicken…then place it in the middle of the pan. You pour out the salt at the edges of your tray or pyrex. You do not touch the salt to the chicken. I make it about half an inch high to the side of the pyrex. I spice the chicken (no salt). The salt on that pyrex will make your chicken crispy almost caramelized on the outside and very moist on the inside. I bake at 350 degrees. I love to cook my chicken for a long time. This recipe I would give a good hour to an hour and a half. It is the most amazing and easy recipe. Comes out great every time. Would love to get your feedback.
